Abstract
During the first half of 2008, 17 samples of honey from Tetragonisca angustula stingless bee, were collected from the departments of Antioquia, Cauca, Cundinamarca, Magdalena, Santander, Tolima and Valle, in order to estimate the microbial load using the methodology recommended by ICSMF for food analysis.
The analysis indicator groups were Mesophiles, Coliforms, Fungi and Yeasts. The specific Clostridium perfringens and Staphylococcus sp pathogens were sought.
The results show that 59% of samples had counts below 100 CFU / g for Mesophilic microorganisms; 12% are within the range 100 - 1000 CFU / g, and the remaining 29% has levels higher than 1000 CFU / g. In the case of fungi and yeasts, 65% of the samples had counts below 100 CFU / g, 24% within the range of 100 - 1000 CFU / g, and the remaining 12% showed levels above 1000 CFU / g.
In the case of Coliforms, results were 100% negative; this behavior was observed equally for Staphylococcus sp. In a single sample (6% of total), Clostridium perfringens was present with a level of 120 CFU / g.The results indicate that T. angustula stingless bee honey contains varying levels of microorganisms and that further study is needed to establish ranges of quality for this product.
